Nevznikli ako ved\u013eaj\u0161\u00ed produkt \u017eiadneho\u00a0\u010dasopisu, ordin\u00e1cie, telev\u00edzneho programu, ani mi ju nevymyslelo \u017eiadne v\u00e4\u010d\u0161ie\u00a0vydavate\u013estvo, ktor\u00e9 si chcelo spestri\u0165 portf\u00f3lio. A in\u00e1 je asi v tom, \u017ee som si recept\u00fary s\u00e1m\u00a0vymyslel, uvaril, nafotil aj vydal. Zatia\u013e som sa s podobn\u00fdm pr\u00edpadom one-man-show u n\u00e1s nestretol.<\/p>\n<p><strong>Nie je kuch\u00e1rskymi knihami slovensk\u00fd trh v\u00a0poslednej dobe pres\u00fdten\u00fd? Pre\u010do\u00a0mysl\u00edte, \u017ee s\u00fa tak\u00e9 \u00faspe\u0161n\u00e9?<\/strong><\/p>\n<p>Neviem, \u010di s\u00fa v\u0161etky \u00faspe\u0161n\u00e9. Ke\u010f som sa pozeral na rebr\u00ed\u010dky, takmer v\u0161etky pred\u00e1vanej\u0161ie\u00a0knihy sa zaoberali zdravotn\u00fdmi probl\u00e9mami, alergiami, nadv\u00e1hou a vlastne d\u00f4sledkami\u00a0civiliza\u010dn\u00fdch chor\u00f4b. Ja rob\u00edm len to, \u010do m\u00e1m r\u00e1d, a var\u00edm z toho, \u010do mi chut\u00ed, nie som\u00a0v\u00fd\u017eivov\u00fd poradca ani lek\u00e1r. Nedovol\u00edm si u\u010di\u0165, k\u00e1za\u0165, a u\u017e v\u00f4bec nie zakazova\u0165. Ale moja\u00a0\u201cpapierov\u00e1 bloger\u010dina\u201d nezostala nepov\u0161imnut\u00e1, a nesmierne si to v\u00e1\u017eim. Ja v\u017edy ver\u00edm, \u017ee ak\u00a0nie\u010do rob\u00edte \u00faprimne a poriadne, niekto si v\u00e1s v\u0161imne u\u017e len preto, \u017ee to nerob\u00edte len preto, aby si v\u00e1s v\u0161imli.<\/p>\n<p><strong>\u010c\u00edtate a\u00a0riadite sa vy s\u00e1m nejakou kuch\u00e1rskou pr\u00edru\u010dkou? Ak \u00e1no, ktor\u00fa by ste odporu\u010dili na\u0161\u00edm \u010ditate\u013eom?<\/strong><\/p>\n<p>Nem\u00e1m ve\u013ea pr\u00edru\u010diek, ktor\u00e9 by som s\u00e1m pou\u017e\u00edval. Ak chcem uvari\u0165 po \u010dase vlastn\u00fd star\u0161\u00ed\u00a0recept, mus\u00edm otvori\u0165 knihu, preto\u017ee oby\u010dajne improvizujem a presn\u00e9 gram\u00e1\u017ee \u010di pomery si\u00a0nepam\u00e4t\u00e1m ani t\u00fd\u017ede\u0148 potom, ako nie\u010do uvar\u00edm. V tom je skvel\u00e9 uklada\u0165 n\u00e1pady do kn\u00edh! Ale\u00a0dodnes sa ve\u013emi r\u00e1d vraciam ku knihe <em>VEFA\u2019S KITCHEN<\/em>. Ak m\u00e1te radi stredomorsk\u00fa,\u00a0obzvl\u00e1\u0161\u0165 gr\u00e9cku, kuchy\u0148u, vrelo odpor\u00fa\u010dam. Videl som ju v anglickej verzii vo v\u00e4\u010d\u0161ine\u00a0kn\u00edhkupectiev aj u n\u00e1s. M\u00e1 skoro 700 str\u00e1n.<\/p>\n<p><strong>Odkia\u013e \u010derp\u00e1te n\u00e1pady na svoje recepty? Pripravujete ich v\u0161etky s\u00e1m?<\/strong><\/p>\n<p>V prvej knihe som len sk\u00fa\u0161al, \u010di v\u00f4bec nie\u010do tak\u00e9 dok\u00e1\u017eem, a preto som spojil vlastn\u00e9 n\u00e1pady\u00a0so zbierkou toho, \u010do sa mi p\u00e1\u010di vo svete, len u n\u00e1s to akosi \u013eudia nevedia pripravi\u0165. Tak\u017ee som\u00a0tam zaradil aj vlastn\u00e9 recept\u00fary na tzatziky alebo panna cottu. Druh\u00e1 kniha u\u017e bola vlastn\u00fd\u00a0experiment a mie\u0161al som v nej chute a in\u0161pir\u00e1cie z cestovania. Nakoniec sa v\u0161etko do\u010d\u00edtate\u00a0priamo v recepte, ku ka\u017ed\u00e9mu som p\u00edsal \u00favod, pr\u00edbeh alebo postreh pre\u010do a ako vznikal.\u00a0Tretia kniha v\u0161ak bude celkom in\u00e1, ale zvy\u0161ok si zatia\u013e nech\u00e1m pre seba.<\/p>\n<p><strong>M\u00e1te vo svete ve\u013ek\u00fdch svetov\u00fdch kuch\u00e1rov nejak\u00fd vzor \u010di in\u0161pir\u00e1ciu?<\/strong><\/p>\n<p>Pre m\u0148a je in\u0161piruj\u00faci ka\u017ed\u00fd \u010dlovek, ktor\u00fd var\u00ed pre pote\u0161enie. Vtedy varenie nie je nikdy\u00a0kone\u010dn\u00fd stav, ale trvaj\u00faca z\u00e1\u017eitkov\u00e1 cesta, ktorou m\u00f4\u017eete \u00eds\u0165 cel\u00fd \u017eivot. A pr\u00e1ve \u013eudia,\u00a0ktor\u00fdch stretnete kdeko\u013evek na svete, ak ich jedlo ochutn\u00e1te, s\u00fa pre va\u0161u \u010fal\u0161iu fant\u00e1ziu\u00a0rovnak\u00fdm stimulom ako telev\u00edzny \u0161\u00e9fkuch\u00e1r. Ale zo zn\u00e1mych mien m\u00e1m r\u00e1d<em>\u00a0Ramseyho<\/em>, <em>Olivera<\/em> a ve\u013emi mi vyhovuje talianska \u013eahkos\u0165 <em>Davida Rocca<\/em>.<\/p>\n<p><strong>Vy\u0161tudovali ste hotelov\u00fa akad\u00e9miu. Nel\u00e1kal v\u00e1s svet bielych kuch\u00e1rskych\u00a0\u010diapok aj profesion\u00e1lne?<\/strong><\/p>\n<p>L\u00e1kal ma hotelov\u00fd mana\u017ement a potom tlmo\u010dn\u00edctvo. Gastron\u00f3miu som odjak\u017eiva vn\u00edmal ako\u00a0hobby, ktor\u00e9 nas\u00fdti a pred\u013a\u017ei \u017eivot. Tak je tomu dodnes.<\/p>\n<p><strong>Na gastron\u00f3miu ste v\u0161ak nezanevreli ani pred telev\u00edznymi obrazovkami. A bez ra\u0148ajok z\u00a0domu neod\u00eddem. Ke\u010f zapadne slnko, sad\u00e1m k po\u010d\u00edta\u010du, triedim fotky,\u00a0prepisujem pozn\u00e1mky, editujem a pripravujem veci na \u010fal\u0161\u00ed de\u0148.<\/p>\n<p><strong>Okrem vegetari\u00e1nskej, inklinujete k\u00a0nejakej konkr\u00e9tnej svetovej kuchyni?<\/strong><\/p>\n<p>Ja som \u010dlovek stredomorsk\u00fd, musel som niekedy \u017ei\u0165 pri mori, preto\u017ee tam som doma.<\/p>\n<p><strong>Ak\u00e9 najexotickej\u0161ie jedlo ste v\u00a0\u017eivote ochutnali?<\/strong><\/p>\n<p>Nevyh\u013ead\u00e1vam bizarn\u00e9 jedl\u00e1. Stretli ste pri\u00a0zn\u00e1mych hudobn\u00edkoch s\u00a0nejakou gastronomickou zvl\u00e1\u0161tnos\u0165ou? A to sa mi pomerne skoro a\u00a0\u00faspe\u0161ne podarilo naplni\u0165. Sn\u00edval som o tom v dobe, ke\u010f bol internet v \u00fapln\u00fdch po\u010diatkoch a ja\u00a0som vyr\u00e1stol na anglick\u00fdch a americk\u00fdch hudobn\u00fdch magaz\u00ednoch. U\u017e roky som ako hudobn\u00fd\u00a0dramaturg \u010di redaktor ni\u010d neurobil, tak\u017ee ak si to ozna\u010denie e\u0161te aj dnes zasl\u00fa\u017eim, sn\u00e1\u010f len s\u00a0pr\u00edvlastkom \u201cb\u00fdval\u00fd\u201d. Jedin\u00fd sl\u00e1vny, o koho jed\u00e1lni\u010dek som sa kedy zauj\u00edmal, bol a st\u00e1le je\u00a0hudobn\u00edk <em>Moby<\/em>. Je to veg\u00e1n miluj\u00faci zvierat\u00e1, ve\u013emi sa anga\u017euje aj ekologicky a v boji proti\u00a0glob\u00e1lnemu otep\u013eovaniu.<\/p>\n<p><strong>\u010ci u\u017e pracovne alebo s\u00fakromne, ka\u017ed\u00fd r\u00e1d nav\u0161tevuje dobr\u00e9 re\u0161taur\u00e1cie.
