Ale zase, nikdy nevie\u0161 \u010do \u0164a bude v \u017eivote z tej \u0161koly sprev\u00e1dza\u0165. Ja som zvolil hotelovku kv\u00f4li prevahe humanitn\u00fdch predmetov, po\u010dtu cudz\u00edch jazykov a p\u00e4\u0165ro\u010dn\u00e9mu \u0161t\u00fadiu. A hodiny gastr\u00f3nomie, cestovn\u00e9ho ruchu a pr\u00edpravy pokrmov mi z dlhodob\u00e9ho h\u013eadiska dali toho najviac.<\/p>\n<p><b>Ch\u00e1pem, ja som si zasa zvolil kv\u00f4li t\u00fdm ist\u00fdm d\u00f4vodom psychol\u00f3giu. \u010co \u0165a vlastne na gastron\u00f3mii alebo dobrom jedle l\u00e1ka?<\/b><br \/>\nR\u00e1d jem. A r\u00e1d jem dobr\u00e9 jedlo, tak ako asi v\u0161etci. Rozdiel medzi \u013eu\u010fmi ktor\u00ed radi varia a ktor\u00ed nevaria v\u00f4bec, nie je len v samotnom fakte o varen\u00ed. \u010c\u00edm viac sa o gastron\u00f3mii a surovin\u00e1ch dozviem, t\u00fdm viac zis\u0165ujem \u017ee toho e\u0161te st\u00e1le ve\u013ea neviem. Preto je varenie pre m\u0148a akousi celo\u017eivotnou alch\u00fdmiou, ktorej priebe\u017en\u00e9 plody kon\u010dia na tanieri.<\/p>\n<p><b>Tak\u017ee si vlastne gastroalchymista \u010co var\u00ed\u0161 najrad\u0161ej?<\/b><br \/>\nTakmer v\u0161etko \u010do som zozbieral v knihe \u201cMOJE JEDLO\u201d, \u010di\u017ee r\u00fdchle, \u013eahk\u00e9 pokrmy, ktor\u00e9 nevy\u017eaduj\u00fa ve\u013ea \u010dasu na pr\u00edpravu a pozost\u00e1vaj\u00fa z dostupn\u00fdch, \u010derstv\u00fdch surov\u00edn a byliniek. Var\u00edm bezm\u00e4sito a jed\u00e1vam viac ako tri kr\u00e1t za de\u0148, tak\u017ee r\u00e1d pripravujem jedl\u00e1 z ktor\u00fdch sa d\u00e1 postupne \u201cujeda\u0165\u201d\u2026 .<\/p>\n<p><b>\u00c1no, u\u017e dlh\u0161ie sa vie, \u017ee ke\u010f chce \u010dlovek jes\u0165 zdravo, jeden alebo dva obrovsk\u00e9 chody denne mu viac \u0161kodia ako prospievaj\u00fa. \u010co ke\u010f ti pr\u00eddu hostia? Zhost\u00ed\u0161 sa \u00falohy kuch\u00e1ra ty a \u010di to nech\u00e1\u0161 na nejak\u00fa re\u0161taur\u00e1ciu?<\/b><br \/>\nAni si nepam\u00e4t\u00e1m kedy som vzal v\u00e4\u010d\u0161iu partiu na jedlo do re\u0161taur\u00e1cie. Pokia\u013e m\u00e1m \u010das a mo\u017enosti, najrad\u0161ej s\u00e1m toho ve\u013ea navar\u00edm a potom sa hoduje. Alebo sa r\u00e1d nech\u00e1m k niekomu pozva\u0165.<\/p>\n<p><b>To nie je zl\u00fd syst\u00e9m! Ak\u00fd m\u00e1\u0161 n\u00e1zor na bratislavsk\u00e9 re\u0161taur\u00e1cie a m\u00e1\u0161 nejak\u00fa ob\u013e\u00faben\u00fa?<\/b><br \/>\nVyslovene ob\u013e\u00faben\u00fa nem\u00e1m a aj m\u00f4j preh\u013ead je obmedzen\u00fd viacmenej na pracovn\u00e9 stretnutia. V Bratislave m\u00e1m zvy\u010dajne v\u017edy lep\u0161ie jedlo doma ne\u017e v re\u0161taur\u00e1cii, tak\u017ee mi ch\u00fdba d\u00f4vod pravidelne sa stravova\u0165 vonku. Re\u0161taur\u00e1cie akt\u00edvne vyh\u013ead\u00e1vam ke\u010f cestujem, takmer nikdy sa nestravujem vo ve\u013ek\u00fdch hoteloch.<\/p>\n<p><b>V ako \u0161t\u00e1diu je tvoj \u00fadajn\u00fd pl\u00e1n nad zalo\u017een\u00edm vlastnej re\u0161taur\u00e1cie?<\/b><br \/>\nV \u0161t\u00e1diu zam\u00fd\u0161\u013eania sa nad nie\u010dim \u010do nikdy neexistovalo, pri odpovedan\u00ed na ot\u00e1zky v rozhovoroch\u2026 Nem\u00e1m zatia\u013e ani len amb\u00edciu, tob\u00f4\u017e energiu \u010di dokonca peniaze nie\u010do tak\u00e9 na Slovensku sk\u00fa\u0161a\u0165.<\/p>\n<p><b>S\u00fahlas, moment\u00e1lna situ\u00e1cia ur\u010dite za\u010d\u00ednaj\u00facim podnikate\u013eom nepraje. Rad\u0161ej si sa dal na tvoriv\u00fa cestu a vydal si knihu o jedle \u2013 o \u010dom vlastne je?<\/b><br \/>\nMal to by\u0165 p\u00f4vodne dar\u010dek pre bl\u00edzkych, mal\u00e1 zbierka receptov. Nakoniec je z toho kniha ktor\u00e1 v prvom rade odpoved\u00e1 na ot\u00e1zku \u201c\u010co je\u0161, ke\u010f 18 rokov neje\u0161 m\u00e4so?\u201d. Zvykol som si na kombin\u00e1ciu vlastnej a stredomorskej kuchyne, vyzn\u00e1vam pomerne prost\u00fd a zdrav\u00fd \u0161t\u00fdl stravovania. A z\u00e1ujem, ktor\u00fd kniha vzbudila ma presved\u010dil o tom, \u017ee nie som s\u00e1m. \u013dudia u n\u00e1s varia bez rozdielu veku, pohlavia a vzdelania \u2013 som milo prekvapen\u00fd, ko\u013eko \u013eud\u00ed na Slovensku poctivo triedi a vyber\u00e1 to \u010do chce konzumova\u0165. A v\u00f4bec to nie je o peniazoch.<\/p>\n<p><b>Vyhlasujem, \u017ee tak\u00fato kni\u017eku ofici\u00e1lne podporujeme! A \u010do hovor\u00ed\u0161 na projekt Bratilicious?<\/b><br \/>\nDr\u017e\u00edm v\u00e1m palce. Re\u0161taur\u00e1cie by mali dba\u0165 na kvalitu a spokojnos\u0165 hos\u0165a, neraz to kon\u010d\u00ed pri zaplaten\u00ed \u00fa\u010dtu. Preto som r\u00e1d, ak podniky ktor\u00e9 urobili dobr\u00fd dojem, dostan\u00fa v\u00e4\u010d\u0161\u00ed priestor na to aby sa o nich dozvedelo \u010do najviac \u013eud\u00ed. A v\u00fdborn\u00e1 je aj v\u00fdstraha pred nezodpovedn\u00fdmi.<\/p>\n<p><b>Na\u0161\u0165astie sme zatia\u013e narazili len na dva podniky, ktor\u00e9 boli tak\u00e9 nijak\u00e9. \u010co je pre teba osobne pri n\u00e1v\u0161teve re\u0161taur\u00e1cie alebo in\u00e9ho podniku najd\u00f4le\u017eitej\u0161ie? Kvalita jedla, obsluha\u2026?<\/b><br \/>\nSamozrejme prvorad\u00e9 je jedlo. Ale pokia\u013e sa mi nep\u00e1\u010di atmosf\u00e9ra alebo spr\u00e1vanie person\u00e1lu \u010di prostredie, sotva mi m\u00f4\u017ee chuti\u0165. Ak ma niekto posad\u00ed ku chladiacemu boxu so svietiacou reklamou a mus\u00edm pri tom po\u010d\u00fava\u0165 r\u00e1dio, rad\u0161ej si ani nep\u00fdtam jed\u00e1lny l\u00edstok.<\/p>\n<p><b>Posledn\u00e1 ot\u00e1zka \u2013 \u010do by si odk\u00e1zal \u010ditate\u013eom Bratilicious ako fan\u00fa\u0161ikom bratislavskej gastron\u00f3mie?<\/b><br \/>\nAby v\u017edy chutilo, aby \u010d\u00edtali len o pozit\u00edvnych prekvapeniach a aby sa z Bratislavy stal ter\u010d aj pre gastroturistov. Ur\u010dite k tomu m\u00f4\u017eete aj vy sami dopom\u00f4c\u0165 \u010dl\u00e1nkami a odpor\u00fa\u010daniami v angli\u010dtine \u010di nem\u010dine.<\/p>\n<p>To je spolu s nov\u00fdm dizajnom v pl\u00e1ne. D\u00fafame, \u017ee \u010doskoro sa n\u00e1m to podar\u00ed pretavi\u0165 do reality.<br \/>\nMartinovi za posktynutie rozhovoru \u010fakujeme a prajeme v\u0161etko dobr\u00e9 ako v gastronomickej alch\u00fdmii, tak v profesion\u00e1lnom a s\u00fakromnom \u017eivote.
