Dnes v\u00e1m kone\u010dne prin\u00e1\u0161am dlho s\u013eubovan\u00fd rozhovor so zn\u00e1mym moder\u00e1torom a autorom skvel\u00fdch kuch\u00e1rok Martinom Rauschom. Jeho kuch\u00e1rky s\u00fa nie len klasick\u00fdmi zbierkami receptov ale aj n\u00e1dhern\u00fdm foto albumom (ak to tak smiem nazva\u0165). Jeho najnov\u0161ia kuch\u00e1rka nesie \u0161pecifick\u00fd n\u00e1zov \u0160tyri ro\u010dn\u00e9 obdobia a nejak\u00fd \u010das sa dokonca dr\u017eala v na\u0161ej top desiatke. St\u00e1le je v\u0161ak e\u0161te ve\u013ea \u013eud\u00ed ktor\u00fd ani netu\u0161ia \u017ee Pyco je tak skvel\u00fd kuch\u00e1r, tak som mu polo\u017eila p\u00e1r ot\u00e1zok ktor\u00e9 sn\u00e1\u010f bud\u00fa sta\u010di\u0165 na vyplnenie medzier. &#x1f603; Prajem pekn\u00e9 \u010d\u00edtanie.<\/p>\n<p>&nbsp;<\/p>\n<p><strong><u>1. Kedy a pre\u010do ste za\u010dali vari\u0165 ? Podnietilo to vo v\u00e1s nie\u010do alebo r\u00e1d var\u00edte od detstva ?<\/u><\/strong><\/p>\n<p>Ako die\u0165a som pozoroval v kuchyni mamu, nesk\u00f4r na hotelovej \u0161kole sme sa u\u010dili vari\u0165 a gastron\u00f3mia bola jedn\u00fdm z d\u00f4le\u017eit\u00fdch predmetov. A posledn\u00fdch dvadsa\u0165 rokov si var\u00edm tak ako mu chut\u00ed, vzdel\u00e1vam sa, cestujem a ochutn\u00e1vam.<\/p>\n<p><strong><u>2.Mysl\u00edte si \u017ee na na to aby \u010dlovek mohol vari\u0165 potrebuje talent alebo m\u00f4\u017ee vari\u0165 ktoko\u013evek ?<\/u><\/strong><\/p>\n<p>Varenie je ako bicyklovanie. Niekto v\u00e1s to nau\u010d\u00ed, nakoniec si vytvor\u00edte vlastn\u00fd \u0161t\u00fdl a netreba na to \u0161peci\u00e1lny talent. Je to vec cviku, preto\u017ee \u010dlovek z\u00edska zru\u010dnos\u0165, znalosti aj odvahu, tak\u017ee v\u00e4\u010d\u0161ina receptov pre neho nebude \u017eiadny probl\u00e9m. Na vlastn\u00e9 kre\u00e1cie a chutn\u00e9 v\u00fdtvory zas u\u017e treba asi aj ten talent, ale bez z\u00e1kladu a tr\u00e9ningu by to k ni\u010domu nebolo.<\/p>\n<p><strong><u>3. Viedol v\u00e1s niekto k vareniu ? M\u00e1te nejak\u00fd, treb\u00e1rs kuch\u00e1rsky vzor ?<\/u><\/strong><\/p>\n<p>Nem\u00e1m \u017eiadny konkr\u00e9tny vzor a r\u00e1d sa nech\u00e1m in\u0161pirova\u0165 k\u00fdmko\u013evek. Varenia a jedlo vn\u00edmam ako kolekt\u00edvny \u0161port, v\u017edy sa je s k\u00fdm podeli\u0165 a \u013eudia ktor\u00ed holduj\u00fa vareniu si radi vymie\u0148aj\u00fa znalosti \u010di in\u0161pir\u00e1cie, teda aspo\u0148 ja to tak m\u00e1m odjak\u017eiva. Aj preto som sa rozhodol vlastn\u00e9 n\u00e1pady publikova\u0165 kni\u017ene.<\/p>\n<p><strong><u>4.Pam\u00e4t\u00e1te si va\u0161e ob\u013e\u00faben\u00e9 jedl\u00e1 z detstva ? Ko\u013eko sa toho zmenilo ?<\/u><\/strong><\/p>\n<p>Ja som nikdy neholdoval konkr\u00e9tnym pokrmom, ale pam\u00e4t\u00e1m si \u017ee som nemal ve\u013emi v l\u00e1ske hlavn\u00e9 pokrmy na sladko ako napr\u00edklad paren\u00e9 buchty \u010di duk\u00e1tov\u00e9 buchti\u010dky. To ma celkom obi\u0161lo. Naopak m\u00e1m r\u00e1d od mali\u010dka cibu\u013eu a zemiaky \u010di cesnak.<\/p>\n<p><strong><u>5.Dok\u00e1\u017ee v\u00e1s nadchn\u00fa\u0165 pe\u010denie rovnako ako varenie ? Alebo je v\u00e1m cukr\u00e1rina vzdialen\u00e1 ?<\/u><\/strong><br \/>\n<u><br \/>\n<\/u>Cukr\u00e1rstvo je celkom in\u00fd druh kreativity ne\u017e varenie. Cukr\u00e1rstvo je o fyzike a ch\u00e9mii, priam osudov\u00e9 s\u00fa pomery jednotliv\u00fdch surov\u00edn a skupenstiev, na m\u00f4j vkus je tam vysok\u00e9 zast\u00fapenie cukrov a tukov, tak\u017ee pe\u010diem s\u00edce r\u00e1d ale striedmo a rozumne. To vidno aj v mojich knih\u00e1ch. Kilo cukru mi doma neraz vydr\u017e\u00ed aj pol roka.<\/p>\n<p><strong><u>6.Ak\u00fd mate n\u00e1zor na vegetari\u00e1nstvo \u010di veg\u00e1nstvo ? Viete si prestavi\u0165 varenie bez \u010dohoko\u013evek \u017eivo\u010d\u00ed\u0161neho ?<\/u><\/strong><\/p>\n<p>Viem si to predstavi\u0165. Nem\u00e1m \u010do s\u00fadi\u0165. Od roku 1994 som ovolaktovegetari\u00e1n a mysl\u00edm \u017ee rob\u00edm dobre, m\u00f4jmu telu to prospieva. V\u0161etko s\u00fa to v\u0161ak individu\u00e1lne rozhodnutia spojen\u00e9 so zdravotn\u00fdm stavom, schopnos\u0165ou vedie\u0165 kedy a \u010do jes\u0165, najlep\u0161ie v konzult\u00e1cii s lek\u00e1rom alebo na z\u00e1klade aktu\u00e1lnych testov.\u00a0 Nemal\u00fa rolu zohr\u00e1vaj\u00fa aj etick\u00e9 d\u00f4vody.<\/p>\n<p><strong><u>7.Recepty vopred prem\u00fd\u0161\u013eate alebo jednoducho jedlo dotv\u00e1rate &#8220;za pochodu&#8220;?<\/u><\/strong><\/p>\n<p>Jedno aj druh\u00e9. Varenie nie je dia\u013enica ale cesta \u017eivotom so v\u0161etk\u00fdmi horami aj dolinami. Ak sa v\u0161ak p\u00fdtate na to, \u010do aj publikujem v knih\u00e1ch, tak v tej poslednej ide len o nov\u00e9 kre\u00e1cie na z\u00e1klade sez\u00f3nnych surov\u00edn\u00a0 pod\u013ea \u0161tyroch ro\u010dn\u00fdch obdob\u00ed. A v\u0161etko s\u00fa to s\u00edce nov\u00e9 recept\u00fary,\u00a0 neraz improvizovan\u00e9 za pochodu ale dostato\u010dne odsk\u00fa\u0161an\u00e9.<\/p>\n<p><strong><u>8.Ako u v\u00e1s vznikol n\u00e1pad\u00a0nap\u00edsa\u0165\u00a0knihu ?<\/u><\/strong><\/p>\n<p>Prv\u00e1 kniha vykvitla na pochovanom nap\u00e1de vytvori\u0165 mal\u00fa zbierku receptov len pre mojich priate\u013eov. Nestihol som to v\u010das a tak som si nesk\u00f4r povedal, \u017ee by to bol skvel\u00fd pracovn\u00fd projekt a nakoniec to zmenilo nielen m\u00f4j profesion\u00e1lny \u017eivot.<\/p>\n<p><strong><u>9.Ost\u00e1vate pri kuch\u00e1rkach ? Neprem\u00fd\u0161\u013eali ste nad in\u00fdm \u017e\u00e1nrom ?<\/u><\/strong><\/p>\n<p>Neviem \u010do m\u00e1te na mysli ale zatia\u013e sa c\u00edtim by\u0165\u00a0 viac kuch\u00e1rom a fotografom ne\u017e autorom. Pracujem v teoretickej rovine\u00a0 e\u0161te na jednom koncepte, ktor\u00fd nebude len o varen\u00ed.
